Memorial Day is upon us. Now what out there has some yummy recipes for this coming weekend? Any grilling recipes you would want to Share?

I looking for a good way to grill vetables o. The grill. Especially ones that hold up and do t fall apart. Anyone have suggestions?

I am thinking about making this as end of year teacher's gifts, and for memorial day. The photo makes them look good! It's probably not something I would normally make (I bake a lot), but I made homemade butterscotch syrup and need something to do with it since I made a lot. I'm hoping that substituting out the butterscotch chips with the syrup (not exact amounts) will work...we shall see!

**Scotcharoos Pinwheels**

*Ingredients
-6 cups rice krispies
-1 cup light corn syrup
-1 cup granulated sugar
-1 cup peanut butter
-11⁄2 cups semi-sweet chocolate chips
-11⁄2 cups butterscotch chips

*Instructions

Total time
45 mins

Cook time
15 mins

1. Put the rice krispies in a large bowl and set aside.
2. Line a sheet pan with parchment paper allowing it to hang over the long sides. Grease and set aside.
3. Stir the light corn syrup and granulated sugar in a saucepan and bring to a boil over medium heat stirring
often.
4. Remove from heat and stir in the peanut butter.
5. Pour over the rice krispies and stir to coat.
6. Press into the sheet pan.
7. Melt the chocolate chips and butterscotch chips in the microwave for 45 seconds on high. Stir and then
continue heating and stirring in 15-second intervals until smooth.
8. Spread over the scotcharoos in the pan. Allow the scotcharoos and frosting to cool and set for a few
minutes. Bars should be soft enough to still be flexible but not so soft that they will fall apart.
9. Slowly roll up the bars starting on the long sides removing the parchment paper as you go. Press and
squeeze any cracks or holes shut.
10. Use a sharp knife to slice the scotcharoos roll into pinwheels.

I made these for the kids yesterday...really easy, and they freeze well. They stay nice and creamy when frozen! Again, a dessert from me! Smile

Frozen Pudding Pops

-1 pkg. (3.9 oz.) JELL-O Chocolate Flavor Instant Pudding
-2 cups cold milk
-1 cup thawed COOL WHIP Whipped Topping

1. Beat pudding mix and milk in medium bowl with whisk 2 min. Stir in COOL WHIP.
2. Spoon into 6 paper or plastic cups. Insert wooden pop stick or plastic spoon in center of each cup.
3. Freeze 4 hours or until firm. Remove from cups before serving.

MEAT PIES.

Anyone have a good recipe for homemade meat pies.  My mom had one she knew by heart.  never wrote it down.  Unfortunately when she passed away she took it with her.

Spanish shrimp pil pil

Shrimp
Garlic (more is better)
Paprika
red pepper flakes
Spanish Olive oil (better at
Parsley


Add about half cup or more of olive oil in pan
Add red pepper flakes to oil
Add Smashed garlic to oil
Add Chopped garlic to oil
Save Sliced garlic for after straining
Add raw shells from shrimp to oil
Cook for a few min on medium until shells change color and garlic browns a bit
Strain out oil and return to pan
Add sliced garlic, shrimp and a little bit of paprika
 cook for a few minutes. Do not over cook
Garnish with parsley
Serve with your favorite fresh crunchy bread for dipping

This also makes a great pasta sauce

Created this one with my wife. Still working on a name. Any suggestions welcome.

Coco snow shrimp

Coconut rice:
2 packs brown rice
1 can coconut milk
1 lime
3 shakes curry powder
1 tablespoon sweet cooking rice seasoning
Salt

Shrimp:
1 bag frozen Shrimp
Olive oil
Little spicy red peppers
1 Shallot
Bottoms and middle of green onion
Pepper flakes
Half clove garlic
Sea salt
Snow pea
Lime
Fish sauce

1)Add about half cup of olive oil in pan on medium
2)Add red pepper flakes to oil
Add Smashed garlic to oil
Add Chopped garlic to oil
Save Sliced garlic for after straining
3)Optional(Add raw shells from shrimp to oil)
4)Cook for a few min until garlic browns a bit and optional shrimp shells change color
5)Strain out oil and add to larger pan
6)Add snow peas and cook for about 5 minutes on medium
7)add shallots and bottoms of green onion(the white part).
Add more garlic.
 Add sliced spicy red peppers and sea salt
8)Cook for a few minutes then add the shrimp, lime and a few drops of fish sauce.
Do not over cook shrimp.
9)Garnish with green onion

Brussel sprouts and hummus

Cut stems. Cut sprouts in half

Cook brussel sprouts for a couple min on med high to brown. Add salt and pepper

Lower to medium. Add small amount of water and cover to steam

Remove cover and evaporate water

Add some honey when water evaporates (I use a cayenne honey)

Stir around and knock of some leaves (crispy leaves are my favorite part) but don't burn the honey

Heat hummus and add to middle of plate.

Place sprouts around hummus
