Good post on olive oil, I use it fairly often.  You can also use olive oil in a well known "weight loss" trick. Twenty to thirty minutes from dinner, or I guess lunch Use  pieces of bread which you lightly dunk a few times into a bit of oil in a bowl.  I used to add sallt and garlic sauce for flavor.  I think you want to get a good half teaspoon to a full spoon if I recall, but I don't so best google, "olive oil weight loss" maybe.  Theory being the bread expands in your stomach and with the oil, you won't eat as much dinner.  You feel fuller faster.   Nothing too esoteric, and it's a good hors d'oeuvre.  I don't  remember if it worked, but it's a tasty pre meal warmup that goes well with red wine.
