Scientists Discover Why Tomatoes Lose Flavor in the Fridge - Their Genes 'Chill Out'
#2
Excellent post Ice.  I heard this years ago, without the scientific reasons.  I always store my tomatoes on the shelf or counter top, and if you refrigerate, it doesn't take much practice to tell the difference.  I keep one or two in the fridge if I know I'm not going to get to them for a time and will use them in a stew, or as part of a bigger idea.  They do last longer in the ice box, but lose flavor.  Genetic engineering is kind of the boogy man in most cases, but in this case, it would be a good effort.  You can always buy them on a bit of the unripe side and let them mature on the shelf if you want them to last longer.

Chilling-induced tomato flavor loss is associated with altered volatile synthesis and transient changes in DNA methylation, Proceedings of the National Academy of Sciences

I just hate it when processes mess with the DNA methylation of my vegetables.
