In honor of St. Patrick’s Day, what is your favorite food that you associate with the Emerald Isle? For me it is hands down colcannon with bacon. It is a lovely carb rich treat of mashed potatoes, kale, heavy cream, and bacon. I can make a meal out of just this even though it is often served as a side.
Or, do you have any other ethnic dish you love (besides Irish)?

A potato. Makes me feel closer to me ancestors. When they could keep a potato that they grew.

I absolutely hated potatoes as a child but I learned to like them as an adult. I was an extremely picky eater back then.
